Last week we had a great trip to Lake City. Our family celebrated my niece’s first birthday, and my mom was here from North Carolina for a visit. She came back to Colorado Springs to spend a few days with us, and we loved having her here.
With the traveling, birthday party, and our first baby-free dinner date since Audrey was born, we had a lot of “cheat” days this month. I lost 7 pounds in January eating low-carb, but this month I’ve been stagnant. I’m looking forward to getting back into eating well, and I’m also trying to drink more water again.
The meals for this week are very yummy! Two of them are slow-cooker meals, and three are vegetarian or could be easily adapted to be vegetarian. The red beans and rice is unlike any other red beans and rice recipe I’ve ever tried, so be sure to check it out.
Monday - Easy Red Beans and Rice (we had this Sunday, but it is so fantastic I really wanted to include the recipe; we make the recipe with Italian sausage)
Tuesday – Slow Cooker Black Bean and Cilantro Soup (we had this a few weeks ago and it was a big hit!)
Wednesday – Dinner with friends
Thursday – Zucchini Bake with Feta and Thyme
Friday – Slow Cooker Greek Lentil and Feta Soup
Saturday – Leftovers
